Tahr Tataki

List of Ingredients

500g Tahr Striploin

Marinade
2 tbsp Oyster Sauce
3 tbsp Soy Sauce
1 tsp Sesame Oil
Bunch Coriander stalks

Garnishes
150g Cherry Tomatoes, cut into 1/4s
80g Blueberries, cut in 1/2
1 Red Chilli, thinly sliced
1 Radish, thinly sliced into matchstick size
Bunch Fresh Coriander Leaves
2 Spring onion stalks, thinly sliced
100ml Ponzu Sauce, available from supermarkets or Asian grocers.

Wasabi mayo
4 tbsp Japanese Mayonnaise
1 tsp Wasabi Paste

Cooking Method

Prep Time: 2 hours
Cooking Time: 15 minutes
Serves: 4-6 people

Method

Trim the tahr striploins removing any silver skin. Mix together the oyster sauce, soy sauce, sesame oil and chopped coriander stalks. Pour over the tahr striploins and leave to marinate for at least 2 hours.
While the meat is marinating prepare the garnishes.
Mix together the Japanese mayonnaise and wasabi and place into a small piping bag.
Preheat the BBQ on full heat. Seal the marinated tahr for 40 seconds on each side. You want to keep the meat rare.
Allow the meat to rest before slicing.

To Assemble
Slice the tahr striploins into thin slices and arrange on a platter.
Pour the ponzu sauce over the meat. Pipe a little of the wasabi mayonnaise on the plate.
Arrange the cherry tomatoes, blueberries, chilli, radish, coriander leaves and spring onion over the meat slices.
Serve platter style and enjoy.
