The Tattooed Butcher – Perfect Venison Steak

List of Ingredients

Premium game wild venison medallions
Tattooed butcher all purpose bbq rub
100g unsalted butter
6 twigs of fresh thyme

TATTOOED BUTCHER TOP TIPS
1. Invest in a good cast iron skillet! These are perfect for steak cooking.

2. Ensure when heating your pan you make sure the butter has gone golden brown, this means the pan has reached that extreme temp we need to cook our steak.

3. Don't add the rub onto your steak the night before, this will draw the moisture out of it and cause it to be dry and not enjoyable!

Cooking Method

1. Remove your venison from the fridge 1 hour before the cook, this helps bring the muscles up in temp slowly before cooking and results in a more tender steak.

2. Rub your steaks with a generous amount of The Tattooed Butcher BBQ rub ensuring all sides are covered.

3. Preheat your pan over medium to high heat, add butter and thyme. Once the butter has gone golden brown add steaks to pan.

4. Cook your steaks for 2 minutes per side or aim for an internal temp of 130-135F if your using a meat probe.

5. Remove your steaks from the pan once cooked and rest for 5 minutes then slice and serve.
