Wild Goat Red Thai Curry

List of Ingredients

500g Premium Game wild goat dice
1 brown onion finely sliced
2 cloves fresh garlic crushed
2 tsp olive oil
½ tsp ground ginger
400mls coconut milk or cream
¼ cup soy sauce
2 tbsp red Thai curry paste
½ cup water
1 tbsp brown sugar
2 tsp rice vinegar
salt & pepper (to taste)

Cooking Method

1.Preheat a frying pan over medium-high heat with olive oil, season goat meat with salt and pepper, and sear on all sides. Set-aside.
2.Heat a large pot over a medium temp with olive oil, add your finely chopped onion & garlic and cook for 5 minutes until translucent.
3.Add add all remaining ingredients, mix well bring to a simmer. Turn the heat back to a low temperature, add your goat meat, cover with a lid and cook for approximately 4-5 hours until the goat is meltingly tender.
4.Once cooked serve on steamed rice with your choice of seasonal vegetables.
