Wild Goat Shank with lentils and wild pork bacon

List of Ingredients

4 Premium Game Goat Shanks
300g green lentils
200g onions, caramelised
2 medium carrots, cut into 1cm pieces
2 celery stalks, cut into 1cm pieces
2 garlic cloves, crushed
100g wild pork bacon, diced
¼ cup tomato paste
750ml chicken stock
125ml dry white wine
½ cup frozen peas
¼ cup fresh flat leaf parsley, coarsely chopped
Salt & pepper to taste

Cooking Method

1. Rinse lentils under cold water and drain.

2. Combine lentils, goat shanks, caramelised onion, carrot, celery, garlic, bacon, tomato paste, stock and wine in a 5-litre slow cooker. Cook, covered, on low for about 8 hours.

3. Add peas to cooker, cook covered for 10 minutes. Season to taste.

4. Serve goat shanks garnished with parsley.
