Wild Venison Schnitzel Roll Ups

List of Ingredients

500g Premium Game venison schnitzel
1 cup panko breadcrumbs
¼ cup grated parmesan
1 egg mixed with ¼ cup milk
½ cup flour

FILLING
Haloumi sliced into small strips
Olive oil
Sundried tomatoes (2 per roll)
Courgette cut into strips
Salt & pepper

Cooking Method

1- Preheat oven to 180 degrees. Lay your schnitzel flat on a chopping board, add a light coating of olive oil, salt & pepper.

2- Add one strip of haloumi cheese, 2 sundried tomatoes & a strip of courgette then roll up tight! Repeat this process depending on the number of roll ups you are making.

3- To crumb the roll ups, first coat in flour. Next coat in beaten egg mix, followed by breadcrumbs mixed with parmesan. Lastly add a truss loop or toothpick to ensure the meat doesn’t fall apart.

4- Brink a nonstick frying pan to a medium to high heat with a generous drizzle of olive oil then sear each roll on all sides, this should only take a total of 2 minutes.

5- Place in preheated oven and cook for 15 minutes before serving.
